Lemon Loaf

Lately I've been loving lemon flavors. Especially that lemon pound cake from Starbucks. But Starbucks is expensive, and I have an oven so I thought I'd try to make a lemon loaf of my own. This lemon loaf is a little less sweet than the Starbucks one, and the flavor is natural, as I use lemon zest to flavor the loaf. It doesn't taste exactly like Starbucks, but it's still really delicious. 

And if that's not awesome enough, the recipe is so simple. There are very few ingredients, and the lemon flavor comes from real lemons! Not flavoring and dyes. It tastes great, nd I definitely think you should try making it.

Simple Lemon Loaf

 
 
Ingredients
  • 6 tablespoons butter
  • 1 cup white sugar
  • 2 eggs
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 1½ cups flour
  • 2 teaspoons baking powder
  • Salt
  • ½ cup milk
Instructions
  1. Cream butter and sugar together
  2. Add eggs, zest of lemon, flour, baking powder, and salt
  3. Add milk to mixture
  4. Bake 1 hour at 325F
  5. While hot, cover with lemon juice and sugar

I loved how this loaf turned out. It's a great snack and I really enjoyed making it. The lemon juice and sugar on top really added a lot of flavor and made it extra delicious!

Cinnamon Muffins

Hey guys. Today I am making cinnamon muffins. I don't know about you, but I am always running out of things to have for breakfast. I either eat the same thing for weeks on end and get sick of it, or I jut don't want anything we have on hand. Muffins are a great breakfast treat that I think I will never get sick of.

These treats turned out great! My whole family loved them. The cinnamon sugar topping really made the whole muffins. They were simple and had a small amount of ingredients. My only regret was using almond milk rather than regular milk, a they did not rise very much.

Cinnamon Sugar French Breakfast Muffins     

  • Prep 10 min

Ingredients Serves 12

  1. 1 12 cup all-purpose flour,
  2. 12 cup white sugar,
  3. 1 12 tsp baking powder,
  4. 14 tsp ground nutmeg,
  5. 18 tsp salt,
  6. 1 egg, lightly beaten
  7. 12 cup milk,
  8. 13 cup butter, melted
  9. 14 cup white sugar,
  10. 12 tsp ground cinnamon,
  11. 13 cup butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper liners.
  2. In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg, and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture and stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups.
  3. Bake for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar with cinnamon in a small bowl. When the muffins are done, dip the tops in remaining 1/3 cup melted butter, then in cinnamon sugar mixture. Serve warm.

Although my version was not as picturesque as the original, they still tasted delicious and are a great treat for any time of day. The soft, cinnamon-sugar glaze and the warm center are really what makes these so good. If you are eating these after you've baked them, I'd strongly recommend to heat them up in the microwave prior to eating because they taste best warm.

Brownies!!

Today I am going to how you how I made brownies last night! I used such a simple and easy recipe I got off Pinterest from a blog called http://iambaker.net/homemade-brownie-mix/ . This blog has so many great recipes on it and this one was great! The best part about it was there were minimal ingredients, and I had them all on hand. It also didn't take that long to make. Probably only about twenty minutes prep! Here is the recipe:

Brownies

Dry Ingredients

  • 1 cup white sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Wet Ingredients

  • 1/2 cup butter melted, then cooled
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. Sift together all dry ingredients. Place into a jar or airtight container.
  2. Melt butter and set aside to cool slightly. In a medium bowl, beat two eggs with the vanilla. Add in and gently stir dry ingredients. Pour the melted butter into brownie mixture and mix until just incorporated. Spread batter in a prepared 8-inch square pan and bake for 20-22 minutes at 350 degrees.

Chocolate Mug Cake

Today I'm going to show you how to make a mug cake. That's right. A cake in a mug. It's literally the coolest thing I've ever made. It's a perfect quick treat to make when you don't have a lot of ingredients in your house. I found the recipe on Pinterest from a website called    http://eugeniekitchen.com/brownie-in-mug/

Ingredients
  • ¼ cup all-purpose flour (30g)
  • ¼ cup light brown sugar (50g)
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons unsalted butter, melted
  • ¼ cup milk (60ml)
  • Chocolate chips, to serve.
Instructions
  1. First, in a mug add in all-purpose flour, light brown sugar, and unsweetened cocoa powder. And whisk until homogeneous. Make sure there is no cocoa lumps.
  2. Add melted unsalted butter and milk into (1). And stir until homogeneously mixed. The chocolate batter smells already so good.
  3. Clean the rim a little and microwave for 1 minute. The oven is set to 800 watt and my brownie doesn't explode. Check the power of your microwave oven and if yours is stronger, microwave for 30 seconds at a time. Then repeat microwaving for 10 seconds at a time until there is no fluid on surface. It took 1 minute and 30 seconds today.
  4. Arranging chocolate chips on top would be a great idea. Let cool little for about 20 minutes before serving.

The recipe above recommends to cook the mug cake for one minute in the microwave, but my microwave does not have a lot of power so I cooked it for around two minutes. It really just depends on your microwave.

This is a really cool treat to make, and it only takes five ingredients. I really enjoyed making this because it was really simple, and tasty!

Peanut Butter Cookies

Today I am showing you how I make peanut butter cookies. Here is the recipe I use:


After I mixed  the wet ingredients it looked like this:

I like this recipe because it is so simple to make, and the cookies are delicious. The only drawback is that you have to leave the cookie dough in the fridge for two to three hours. But you can do other things while you wait. I covered my dough in plastic wrap:
I then sectioned out the dough and made a design on the top of the cookie:
Then, I baked the cookies. The recipe says to cook for ten minutes in a preheated oven. I do this for the first batch, but leave the oven fully heated for the second. I've also cooked all batches in a fully heated oven, either works. If you want the cookies to be a little softer in the middle, I would cook them in a preheated oven. If not, I would let the oven preheat fully.

These cookies are delicious, and are a classic that everyone wil love! Here are some pictures of the finished product!

Chocolate Chip Cookies

The first recipe I'm showing you today is a classic: chocolate chip cookies. These timeless treats will never go out of style! This is always a nice treat to make spontaneously because the ingredients are always on hand. These cookies also are made in big batches, so you'll have lots of leftovers to enjoy later. I always use whatever recipe is on the back of the chocolate chips I use (mainly tollhouse), because the recipe is simple and turns out great (I'll put that recipe below).

I start by putting the dry ingredients in a separate bowl, and mix the wet ingredients together. After that you add the dry ingredients into the wet ones, which makes your batter. it's so quick and easy. Here are some pictures of some I made:

I find that the best bake time is ten minutes. They come out a nice golden brown, but still soft in the middle. This recipe tells you to use semi-sweet chocolate chips, which is my favorite to use, but be creative! You could substitute m&m's or any other kind of chocolate chips.
