Shortbread Cookies

I don't know about you but I love a classic shortbread cookie. The simple flavor is something almost everyone loves. So today I will be showing you how I make these classic cookies.

The recipe I used came from a blog called The Semisweet Sisters. This variation of shortbread only has four ingredients, which is great because the dough takes minimal time to make. The only time consuming part is when you have to chill the dough in the refrigerator for twenty to thirty minutes. I chilled mine overnight, but had to let it sit out for a while so I was able to shape the dough.

Here is the recipe I used, straight from their blog:

Vanilla Shortbread Cookies (4 Ingredient)

Ingredients
  • 2 cup all purpose flour
  • 2 stick salted butter (1 cup), softened
  • ½ cup powdered sugar
  • 2 teaspoons vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix softened butter, powdered sugar, & vanilla together. Stir in flour.
  3. Chill dough for 20-30 min.
  4. Scoop dough into balls. Flatten with the bottom of a glass using plastic wrap in between to keep the cookies from sticking to the glass. Flatten to about ½" thick.
  5. Bake 12-15 minutes.

Here is how my cookies turned out:


They do have dents in to them due to the small cup I used to flatten the cookies, but they still taste great. Next time I make these I will have to use a bigger cup. I also want to make note that the recipe says to wrap plastic wrap on the bottom of the cup. Do not ignore or forget this step. The plastic wrap does not stick to the dough whatsoever and leaves the cookies in one piece.

I love these cookies because of their melt-in-your-mouth texture and classic flavor. My whole family love these and I'm sure yours will too!
